Baba Ghanoush

Mmmm. This is my dinner tonight, served with tortilla chips (not the traditional complement!--which is pita).

2-3 eggplant (i.e. 2 if you're cheap like me)

-roast whole at 400* for 45 min.
-cut in half, scoop out the flesh, press in a colander to remove excess liquid. Puree.

Add and puree:
2 cloves garlic,
1 1/2 Tbsp tahini
juice from 1 large lemon (or 3 Tbsp+a bit)
1/2 tsp salt.

Serve drizzled with olive oil, unless there's no one around to impress, because you're batching it alone tonight. Like me. sniff.

Newest, Best Dip Ever!

spicy coconut milk salsa hummus!

combine in a blender:

one half can of coconut milk
one can of chick peas
teaspoon of salt
teaspoon of cayenne (to taste)
teaspoon of onion/garlic powder
one tomato
a generous teaspoon or two of vegetable stock powder and
Spicy Pepper Medley spice.

blend until saucy! and enjoy.

Japanese Stir-fry salad

Toast in a dry frying pan:

2 crumbled up packages of mr. noodles (or substitute)
1/2 cup crushed almonds
4 Tbsp sesame seeds
-set aside.

Meanwhile, mix the dressing:
2 packages Mr. noodles powder (or 2 teaspoons powdered vegetable broth for Lenten version--not that Mr. Noodles uses real meat!!)
1/4 cup oil
4 Tbsp rice vinegar
3 Tbsp brown sugar
3 Tbsp soya sauce
-set aside.

Chop:
like, half to 3/4 of a cabbage (or use pre-cut cole slaw)
4 green onions

-stir fry all together in frying pan.
