Jalepenos stuffed with Feta

This is to die for!

Phil and I were given a Costco version of these just prior to leaving B.C. It was hard to leave...

Take some jalepeno peppers, core them and take ALL the seeds out.
Stuff as much feta cheese as you possibly can into them.
Marinate in olive oil and white vinegar.

We marinated them for a day, and they probably could have stood to be marinated longer, but they were good that way as well.

These are AMAZING. Great as a snack or appetizer. While the vinegar mutes the heat a bit, I advise keeping some water handy.
